1 to 1.5 lb. chicken thighs or breasts.
1 10 to 12 oz. bag frozen broccoli and cauliflower
1 28 oz. can stewed tomatoes.
1 14 to 16oz can black beans
1/8 cup Onions (fresh or frozen)
1/4 cup 3 pepper and onion blend (frozen or fresh)
1 6.5 oz can of mushroom stems and pieces
2 Tablespoons extra virgin olive oil
1.5 tablespoon curry
1/2 teaspoon Garlic powder.
Salt Black pepper
– Preheat large skillet on medium
– Reduce to medium low combine olive oil, curry, peppers, onions, and garlic power. Cook for 10 minutes.
– Cut chicken into bite size pieces and salt and pepper moderately.
– On medium, stir chicken into preheated seasoned olive oil and cook for 20 minutes stirring often.
– Add broccoli and cauliflower, tomatoes, black beans, and mushrooms cook on medium for 10 minutes stirring occasionally.
– Reduce heat to medium low and cooked coved for additional 20 minutes stirring occasionally.
