Cilantro & Mustard Greens

2 Tbsp. olive oil
1/8 Cup chopped onion
1/2 Cup long grain wild rice (precooked) or cauliflower rice.
1 Tsp. paprika
3 Crushed garlic cloves
1 Tsp. cumin
1 Tsp. ginger power
2/3 Cup beef broth
1 Cup chopped cilantro
1 lb. Mustard greens
Salt to taste
Black pepper to taste
Fresh lemon juice (optional)

– Heat oil and onions in large pot on med heat for 10 min.
– Stir in rice, paprika, ginger, garlic & cumin, cook for 5 min.
– Add broth and cook for 10 min. stirring occasionally
– Add mustard greens and cilantro a little at a time, coating with mixture
– Cook for minutes, add a little extra broth if the greens start getting dry
– Salt and pepper to taste
– Add a couple squirts of fresh lemon juice (optional)
