Cauliflower Rice and Black Beans

12 oz. bag of frozen cauliflower rice
15 oz. can of black beans
1/4 cup of mixed chopped onion and peppers
1 teaspoon of minced garlic
1/2 teaspoon celery flakes
1/4 teaspoon cumin
1/4 teaspoon of salt
2 teaspoons Cajun seasoning
Pinch of cayenne

Prepare cauliflower rice per package directions.
In a medium sized saucepan, combine black beans with additional ingredients.
Heat on medium high for 10 minutes.
Combine black bean mixture with prepared cauliflower.
Heat on medium low heat for 15 to 20 minutes, stirring occasionally.

For extra flavor, try adding chopped andouille sausage, chopped summer sausage, seasoned chicken pieces, or seasoned hamburger. For a special treat, add sausages and chicken. Add the meat of your choice when preparing black bean mixture.

Servers 2 as a main dish and 4 to 6 as a side dish.
