Cajun Mixed Vegetable

2 Cups (5 oz.) broccoli florets
2 Cups (5 oz.) cauliflower florets
1 Stalk chopped celery
1/4 Cup sliced white mushrooms (or small can of mushrooms, drained).
1/4 Cup green or multi-color chopped peppers
1/4 Cup chopped white onion
1/8 Cup chopped cashews (or sliced almonds)
1/8 Cup sunflower seeds
3/8 Cup (divided 1/4 and 1/8) extra virgin olive oil
1 Tsp. garlic power
1/2 Tsp. ginger power
2 Tsp. Cajun seasoning

– Preheat large skillet or wok on medium high heat.
– Stir in 1/4 cup olive oil, garlic power, ginger, and Cajun seasoning.
– Cook for 3 minutes stirring frequently.
– Stir in celery, mushrooms, peppers, and onion.
– Cook for 5 minutes stirring occasionally.
– Stir in broccoli and cauliflower.
– Cook for 20 minutes stirring occasionally.
– Stir in chopped cashews and 1/8 cup olive oil.
– Cook for 5 minutes stirring frequently.
– Stir in sunflower seeds.
– Cook for 2 to 3 minutes stirring frequently.

Serves 2 as main dish or 4 as a side dish.
