1 red cabbage
1/2 white or yellow onion
10 oz. fresh button mushrooms
2 tsp. minced garlic
1/4 stick butter
3 tablespoons of extra virgin olive oil
1/4 cup Parmesan (or Parmesan Romano) cheese.
Preheat oven to 400.
Clean and slice red cabbage into 1-inch steaks.
Chop 1/2 onion and mushrooms into 1/4 inch or smaller pieces.
In small pan, melt butter and sauté onion, mushroom, and garlic.
Cover the bottom of a 15-inch glass-baking dish with olive oil.
Place red cabbage steaks in glass-backing dish.
Cover the red cabbage steaks with onion, mushroom, and garlic mixture.
Evenly sprinkle Parmesan cheese on top of red cabbage steaks.
Bake in oven at 400 for 50 minutes.
Let set for 10 minutes before serving.
