1/4 cup olive oil (for chicken)
1/8 cup olive oil (for peanut butter sauce)
1/4 cup of peanut butter
1 tsp. powered ginger (for chicken)
1/2 tsp. powered ginger (for sauce)
1 tbs. garlic power
1 tbs. black pepper
2 tsp. white pepper (1 for chicken 1 for sauce)
1 cup Chopped mixed peppers (green, red, yellow).
1/2 cup Chopped white onion.
1 lb. Chicken breast or thighs cut into bite size pieces.
Salt to taste.
– Heat skillet on medium high.
– Add olive oil, 1 tsp ginger, garlic power, black pepper, 1 tsp. white popper and mix well.
– Stir in onion and peppers.
– Heat for 7 minutes.
– Stir in chicken, add salt, and heat for 25 minutes stirring occasionally.
– In souse pan on low, heat olive oil, ginger and white pepper for 10 minutes.
– Stir in peanut butter and heat on low until chicken has cooked for 25 minutes.
– Stir the peanut butter mixture into the chicken and cook for additional 10 minutes.
Serve warm with seasoned cauliflower rice.
