{"id":1168,"date":"2023-07-24T17:13:12","date_gmt":"2023-07-24T21:13:12","guid":{"rendered":"https:\/\/tcoulter.com\/WP\/?page_id=1168"},"modified":"2023-07-27T17:38:27","modified_gmt":"2023-07-27T21:38:27","slug":"my-way-chicken-alfredo-no-fettuccine","status":"publish","type":"page","link":"https:\/\/tcoulter.com\/WP\/whats-cooking\/my-way-chicken-alfredo-no-fettuccine","title":{"rendered":"My Way Chicken Alfredo No Fettuccine"},"content":{"rendered":"<p>You will not believe your taste buds. <\/p>\n<p>Medium Cauliflower (sliced into 3\/4-to- 1-inch strips)<br \/>\n1 to 1.5lbs Boneless Chicken Breast<br \/>\n1\/8 cup Extra Virgin Olive Oil<br \/>\n1\/4 cup Half and Half (or heavy cream)<br \/>\n4 tablespoons butter (dived in two)<br \/>\n2 tablespoons Sour Cream<br \/>\n1\/2 teaspoon Garlic Powder<br \/>\n1\/2 teaspoon Italian Seasoning<br \/>\n1\/2 teaspoon Basil<br \/>\n1oz Grated Parmesan<br \/>\n1oz Shredded Mozzarella<br \/>\n1\/2 teaspoon Salt<br \/>\nPinch Black Pepper<\/p>\n<p>&#8211; Preheat oven to 380.<br \/>\n&#8211; Melt 2 tablespoons butter on cookie sheet.<br \/>\n&#8211; Place cauliflower slices on cookie sheet and bake in preheated oven for 25 minutes,<br \/>\n&#8211; In a large skillet mix olive oil, salt, black pepper and heat on medium heat.<br \/>\n&#8211; Cut chicken into bite-size pieces and cook in olive oil mixture for 15 to 20 minutes on medium low heat stirring intermittently.<br \/>\n&#8211; In a small saucepan on low heat melt butter then mix half and half, sour cream, garlic powder, Italian seasoning, basil, grated and shredded cheese.  Cook for 15 minutes stirring constantly.<br \/>\n&#8211; Mix sauce with chicken.<br \/>\n&#8211; Divide sliced cauliflower on dinner plates and top with chicken alfredo sauce.<\/p>\n<p>Serve with side salad.<\/p>\n<p><a href=\"https:\/\/tcoulter.com\/WP\/whats-cooking\">Return to What\u2019s Cooking<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>You will not believe your taste buds.
