{"id":1162,"date":"2023-07-24T16:58:14","date_gmt":"2023-07-24T20:58:14","guid":{"rendered":"https:\/\/tcoulter.com\/WP\/?page_id=1162"},"modified":"2023-07-27T17:38:52","modified_gmt":"2023-07-27T21:38:52","slug":"my-way-chicken-pesto-no-fettuccine","status":"publish","type":"page","link":"https:\/\/tcoulter.com\/WP\/whats-cooking\/my-way-chicken-pesto-no-fettuccine","title":{"rendered":"My Way Chicken Pesto No Fettuccine"},"content":{"rendered":"<p>A taste of home without the pasta.<\/p>\n<p>1 to 1.5lbs Boneless Chicken Breast<br \/>\n1 medium size cauliflower (cleaned and sliced into 3\/4-to-1-inch slices).<br \/>\n1\/4 stick butter<br \/>\n1\/2 cup Extra Virgin Olive oil<br \/>\n2oz (1\/4 cup) basil<br \/>\n1 teaspoon Italian Seasoning<br \/>\n1\/4 teaspoon of Garlic Powder<br \/>\n1\/2 teaspoon Salt.<br \/>\n2oz (1\/4 cup) Grated Parmesan &#038; Romano Cheese<br \/>\n1oz (1\/8 cup) Shredded Mozzarella Cheese<\/p>\n<p>&#8211; Preheat oven to 380.<br \/>\n&#8211; Melt butter on cookie sheet.<br \/>\n&#8211; Place cauliflower slices on cookie sheet and bake in preheated oven for 25 minutes.<br \/>\n&#8211; In a large skillet preheat olive oil on medium heat.<br \/>\n&#8211; Reduce heat to medium low and add basil, Italian seasoning, salt, and garlic powder and continue heating.<br \/>\n&#8211; Cut chicken into bite-size pieces and cook in olive oil mixture for 15 minutes stirring moderately.<br \/>\n &#8211; Reduce heat to low and add grated and shredded cheese.
