{"id":1153,"date":"2023-07-24T16:19:26","date_gmt":"2023-07-24T20:19:26","guid":{"rendered":"https:\/\/tcoulter.com\/WP\/?page_id=1153"},"modified":"2023-07-27T17:35:32","modified_gmt":"2023-07-27T21:35:32","slug":"tomato-and-squash-hamburger","status":"publish","type":"page","link":"https:\/\/tcoulter.com\/WP\/whats-cooking\/tomato-and-squash-hamburger","title":{"rendered":"Tomato and Squash Hamburger"},"content":{"rendered":"<p>1 lb. lean hamburger (85 or 90% lean)<br \/>\n2 tablespoons of olive oil<br \/>\n2 medium size yellow squash, sliced<br \/>\n1\/4 cup chopped onion<br \/>\n1 teaspoon garlic powder (1\/2 in beef and 1\/2 in squash and tomatoes)<br \/>\n2 tablespoons of parsley (fresh chopped or dried).<br \/>\n1\/4 cup water<br \/>\nChopped fresh tomatoes (Between 1 1\/2 and 1 3\/4 cup, or use 12 to 14 oz. diced canned tomatoes).<br \/>\nSalt and pepper to taste<br \/>\nItalian Seasoning (1\/2 tablespoon, divide between beef and squash and tomatoes).<br \/>\nParmesan cheese<br \/>\nOptional: 1\/3 to 1\/2 cup of sliced mushroom pieces.<\/p>\n<p>&#8211; In skillet, brown hamburger, season with salt, pepper, garlic, 1\/8 cup parmesan cheese, and Italian seasoning (optional: mushrooms pieces).<\/p>\n<p>-In a separate preheated (medium high) skillet, saut\u00e9 onions in olive oil for 5 minutes.<br \/>\nAdd garlic, parsley, Italian seasoning.<br \/>\nSimmer 2 to 3 minutes.<\/p>\n<p>-Add water, squash slices, tomatoes, salt and pepper, cooked coved for 20 minutes and uncovered for additional 10 minutes on medium heat.<\/p>\n<p>-Combine meat with tomatoes and squash.
